Nun's Puffs


1/2 Cup butter
1 Cup milk
3/4 cup all purpose flour
4 eggs
1 Tablespoon of sugar
Honey

Preheat oven to 375 degrees, Generously grease twelve 2 1/2 inch muffin cups including edges. Melt butter in a saucepan and add milk, bring to a boil and then add flour all at once, stirring vigorously. Cook and stir until mixture
forms a ball that does not separate. (this is what caught my eye, a ball??-yes it was very intriguing to watch) Remove from heat and let cool for 5 minutes (let cool in another bowl).

Add eggs one at a time, beating for one minute with a wooden spoon after each addition or until smooth. Divide dough evenly among prepared muffin cups, filling about 2/3rds of the way full, sprinkle with sugar.

Bake for 30 minutes or until golden brown and puffy. Remove and serve immediately. I poured honey over the top!! 
I believe warm chocolate would be just as good, what do you think?




Baked French Toast






1 loaf French bread

8 large eggs
2 cups half-and-half
1 cup milk
2 tablespoons granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Dash salt



Slice French bread into 20 slices, 1-inch each. Arrange slices in a generously buttered 9 by 13-inch flat baking dish in 2 rows, overlapping the slices. In a large bowl, combine the eggs, half-and-half, milk, sugar, vanilla, cinnamon, nutmeg and salt and beat with a rotary beater or whisk until blended but not too bubbly. Pour mixture over the bread slices, making sure all are covered evenly with the milk-egg mixture. Spoon some of the mixture in between the slices. Cover with foil and refrigerate overnight.


The next day....preheat oven to 350 degrees F.
Spread Praline Topping evenly over the bread and bake for 40 minutes, until puffed and lightly golden.

Praline Topping

1/2 pound (2 sticks) butter
1 cup packed light brown sugar
1 cup chopped pecans
2 tablespoons light corn syrup
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg


Combine all ingredients in a medium bowl and blend
well.





Banana Nut Bread 


You mostly likely have eaten it, its one of the easiest breads to make and sinfully wonderful!!

Banana Nut Bread Baby!! This is the easiest recipe ever, and there are no special ingredients - well other than the bananas. Go on..try it.. it's not fattening!

REVISED  - Banana Nut Bread

Here is what you need:
2 1/2 cups white sugar
1 cup shortening
3 eggs
1 1/2 cups mashed bananas 
3 cups all purpose flour
1 1/4 cups buttermilk
1 1/2 tsp baking soda
1 1/2 tsp baking powder
1 tsp vanilla extract
1/2 cup chopped pecans

Preheat oven to 350 degrees

Cream together shortening and sugar. Add eggs one at a time beating well after each addition.
Mix in bananas, buttermilk and vanilla. Mix in flour, baking powder and soda. Stir in pecans.
Pour batter into 2 greased 9x5 inch pans. Bake for 50 to 60 mins in the preheated oven, or until a toothpick comes out clean.



Pumpkin Muffins


1 package yellow cake mix
1 (15 ounce) can pumpkin puree
1 teaspoon of ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves

Preheat the oven to 350 degrees. Grease a 12 muffin pan.
Mix together all ingredients. Spoon into muffin cups.
Bake for 20 to 25 minutes or until a toothpick inserted in the center of one comes out clean.

Can you get in easier than that?

I used William Sonoma's Pumpkin Puree and did not add ground cloves, but I'm sure just the regular pumpkin puree will be just as good!! :)
